BBQ Bowl


  • 1 pouch of BeanVIVO Smokey BBQ Pinto Beans
  • 3 large corn in halves
  • 1/4 cup cotija cheese
  • 14 ounce coleslaw mix with red cabbage and carrots
  • 1/2 cup mayonnaise
  • 3 tbsp butter
  • 1 1/2 tbsp lemon juice
  • 1 tbsp white vinegar
  • 1/4 tsp salt and pepper


Place corn pieces in a large pot and cover with water. Let soak for 10 minutes.  place corn on a grill directly over medium-high heat. Cover and grill for 15 to 20 minutes or until corn is tender, turning every 5 minutes and brushing with butter mixture several times during the last 5 minutes of grilling. Season to taste with salt and pepper, set aside.

In a bowl, add the mayonnaise, sugar, lemon juice, white vinegar, salt and pepper to a large mixing bowl and whisk together until fully combined. Add in the coleslaw mix and stir well to combine. Open your pouch of BeanVIVO Smokey BBQ Pinto Beans and cook it for 1 minute in the microwave.

To serve, in a bowl add 1 portion of the coleslaw mixture, then 1/4 cup of BeanVIVO Smokey BBQ Pinto Beans and finally place the corn. Sprinkle de corn with cotija cheese, enjoy!
