- 1 pouch of BeanVIVO Smokey BBQ Pinto Beans
- 20-ounce can pineapple chunks packed in juice
- Red onion
- Fresh coriander
- 1 small green cabbage
- 1 lime
Drain the pineapple and finely chop it. Mince the red onion and chop the cilantro. In a bowl, mix the pineapple, red onion and cilantro together. Thinly slice the green cabbage and radishes. Slice the lime into wedges. Warm up the tortillas.
To serve, place the BeanVIVO Smokey BBQ Pinto Beans in a tortilla, add cabbage, radishes and a squeeze of lime. Top with pineapple salsa and additional coriander if desired. Enjoy!
