- 1 pouch of BeanVIVO Smokey BBQ Pinto Beans
- 3 medium potatoes
- 1/2 tbsp olive oil
- 1 1/2 tsp salt
- Scallions finally chop
- Cheddar cheese grated
Pre-heath oven to 390 degrees F (200 degrees C). Wash potatoes, pierce them a couple of times with a fork and brush with a little bit olive oil and salt. Bake for about 45-60minutes or until soft.
Meanwhile open your pouch of BeanVIVO Smokey BBQ Pinto Beans and cook it for 1 minute in the microwave, set aside.
Cut each (cooled) potato in half (lengthwise) and scoop out most of the flesh (leave a thin layer of potato inside of the skins). Scoop the filling of BeanVIVO Smokey BBQ Pinto Beans into the potato, add cheddar cheese and scallion. Enjoy!
