Medium sweet potatoes (3)
Extra virgin oil (4 tbsp)
BeanVivo Chimichurri (1/3 cup)
Salt and pepper

How to make Sweet Potato Chips?

1.Preheat oven to 350°F. Rinse and rub potatoes. Dry before proceeding. Thinly slice potatoes (with food processor with a slicing blade or a mandoline). Be sure to make them as uniform as possible.

2. Brush each slice with olive oil, salt and pepper.

3. Line 2 baking sheets with parchment paper. Lightly brush olive oil on parchment. Arrange sweet potato slices on baking sheets.

4. Bake for 20 minutes. Flip sweet potatoes and rotate!
