Refried Pinto Beans and Chorizo Tacos


  • 1 pouch of BeanVIVO Refried Pinto Beans
  • 1 Mexican chorizo sausage (casings removed)
  • 1 tsp olive oil
  • 4 Tortillas
  • 1/4 cup Onion, diced
  • 1/4 cup coriander, finely chopped


Heat the oil over medium-low heat in a frying pan. Add chorizo, break it with the back of a spoon and fry for about 5 minutes or until slightly crispy. Open your BeanVIVO’s Refried Pinto Beans and microwave for 1 min tearing a small 2 inch section at the top to ensure steam can escape while reheating. Warm tortillas in a griddle. To assemble, add 2 tbsp of beans in the tortilla, followed by 2 tbsp chorizo. Finally add the onion and fresh coriander for topping. Enjoy!
