- 1 pouch of BeanVIVO Coconut Curry Chickpeas
- 1/2 cup broccoli
- 1/2 cup bell peppers
- 1 tsp fresh parsley
- 1tsp olive oil
- 1 cup white rice
Cook the rice with twice the amount of boiling water and let it rest. In a pan add olive oil and sauté broccoli and bell peppers until tender, then add your BeanVIVO Coconut Curry Chickpeas and move until well mixed.
In a plate serve a layer of rice and top it with the mixture, top it with fresh parsley. Enjoy!
