- 1 BeanVIVO Salad Protein Booster – Edamame and Quinoa (Hint of Lemon)
- 2 cups purple cabbage, finely sliced
- 2 cups green cabbage, finely sliced
- 1 red bell pepper, finely sliced
- 3/4 cups carrots, grated
- 1/2 English cucumber, sliced
- 2-3 green onions, sliced
- 1 large handful of cilantro, chopped
- Dressing of choice (creamy lime dressing: cilantro, garlic, lime juice, honey, olive oil & salt!)
