Chimichurri: Argentina’s Healthy Salsa

This famous salsa is one of the most popular condiments in the world; this succulent parsley, oregano, garlic and chili paste can be bright green or murky brown. Chimichurri goes perfect with any asado, grilled meat and veggies.

If we want to learn more about this delicious complement, we should read about its history. This sauce was probably first mixed by gauchos (cowboys) who used it to flavor the meat they prepared on open fires.

According to the locals, the name chimichurri comes from the Basque word tximitxurri, meaning “ a mixture of several things in no particular order”, probably used dried herbs as fresh herbs would spoil. Another version says that it is a modification of “Jimmy’s Curry”, who was a 19th Century meat trader, because his name was difficult for Argentines to pronounce, its name was turned into “chimichurri”.

Miguel Brasco, a recognized Argentine food critic, things the word was coined when the British failed in their invasion of Rio de la Plata in the 1800’s and were taken prisoner. The prisoners requested condiments for their food and mixed English with Spanish.
Nowadays, most of the kitchens around the world have a chimichurri sauce on the table to accompany whatever meat or pasta is served.

Chimichurri, like many compliments with long history, has several variations. The most common one is the mix of chopped parsley, chopped garlic, oregano, red chili pepper flakes, olive oil and some vinegar.

Some chimichurri misconceptions that must be changed

It is different from pesto

It is very different from the Italian sauce. Although they look similar, they have different flavors; pesto contains: basil, olive oil, garlic, nuts and cheese. On the other hand, chimichurri has oil, water, vinegar, parsley and different herbs and vegetables. Pesto is used for pasta, and chimichurri tastes better on meat.

It is not a marinade

Chimichurri should not be used as a marinade. Some people use it as a flavoring for grilled sausages or meats, but is not really recommend it. Instead, try to use it when the meat is grilled to enhance the flavor.

It is not pureed

This is not true. To mix herbs, vegetables and spices do not make a chimichurri. It is completely different from mayonnaise or any other kind of dip; this is a special sauce that adds to any dish or plate.

It is not the Argentine ketchup

It is completely different from ketchup and it is not the substitute for it. Chimichurri is only used for meats and not for dipping other foods in it, like potato chips, hot dogs, corn dogs or hamburgers.
