- 1 pouch of BeanVIVO Coconut Curry Chickpeas
- 1 Cup of brown rice
- 1 plantain (sliced)
- 1 tsp butter
- 3 cups of water
- 1 tsp fresh parsley
Rinse the rice, then boil the water, add the clean rice and boil for 30min uncovered with the heat on medium-high (or until is tender). Immediately cover it with a tight-fitting lid to let it rest for about 10min. Meanwhile in a pan with the heat on medium-low melt butter and add plantain and cook until golden brown. Open your pouch of BeanVIVO Coconut Curry Chickpeas and cook it for 1 minute in the microwave. Set aside.
In a bowl add the brown rice, then the BeanVIVO Coconut Curry Chickpeas and the plantain. Finally add the fresh parsley and enjoy!
