Breakfast Skillet


  • 1 pouch of BeanVIVO Refried Pinto Beans
  • 3/4 cup shredded Mexican cheese
  • 1 avocado, cut into 1/2-inch chunks
  • 1 tbsp salt
  • 4 eggs
  • 1 tsp black pepper, freshly ground
  • Fresh coriander leaves
  • 1 tbsp hot sauce


Preheat oven to 375 degrees F. Spray a 9-inch cast iron skillet generously with nonstick cooking spray. Pour over BeanVIVO Refried Pinto Beans making sure of spread it well. Sprinkle cheese over the top, then crack eggs on top. Generously season with salt and pepper.

Bake for 15-20min or until egg whites are set. To serve, Drizzle hot sauce on top and garnish with avocado and coriander. Enjoy!
