Black Bean Enchiladas

Black Bean Enchiladas


  • 1 pouch BeanVIVO Baja Black Beans
  • Shredded cheddar or a Mexican cheese blend
  • 1 cup chunky tomato sauce
  • Sour cream for added creaminess (optional)
  • 1/2 avocado, sliced
  • 2 tbsp Fresh coriander leaves
  • 2 tbsp cotiza cheese
  • 3 tbsp red onion, diced


If you want to add some meat-based protein, brown your choice of chorizo, ground beef, or ground chicken on the stove, then mix it into your BeanVIVO Baja Black Beans. Add about 1/4 cup of the mixture and  Tightly roll each tortilla up and place them in the dish, seam side down. Adding a top layer of cheese. Bake in the oven at 350° F for about 15 minutes or until the cheese has melted. Top with sliced avocados and finely-chopped coriander and red onions. Enjoy!
